Speed Reading And Maple And Honey Garlic Chicken

maple_honey_garlic_chicken_17_mfbI am a speed reader.  Not quick, not relatively fast, I’m actually very speedy. I can read an entire book in a matter of hours. I’ll bet you didn’t know that about me.

maple_honey_garlic_chicken_5_mfbThere is a secret to speed reading.  Don’t read every word.  Read only the important words. If you skim the words really fast, you can tell which words are the ones that make the sentence, well….a sentence. The rest is really just extra fluff.

For example, here’s a sentence that you would see in a book or story.

“The Archibald children who live in the blue house next door, with all the toys in the yard, are cute as buttons and wrap their little fists around my heart every time I see them.”

maple_honey_garlic_chicken_6_mfbHere’s the same sentence with the highlighted words as I would read it.

“The Archibald children who live in the blue house next door, with all the toys in the yard, are cute as buttons and wrap their little fists around my heart every time I see them.”

So even though I didn’t read all the words, I still understand the basic idea of the sentence.

maple_honey_garlic_chicken_9_mfbI will tell you it takes some practice and it’s probably not a good idea if you’re studying for mid-terms or doing research, but for me, when I’m reading a top seller or a great murder mystery, I don’t feel the need to read every word. That way, I can read more books and be finished in half the time.

Maple And Honey Garlic Chicken (*Gluten Free)

Prep Time: 10 minutes

Cook Time: 50 minutes

Yield: 8 - 10 pieces

Only use pure maple syrup, not pancake syrup. If you don't have any pure maple syrup you can substitute 1 tablespoon of brown sugar and a little bit of extra oil or water.


    For The Chicken:
  • 8 - 10 chicken legs, or chicken pieces of your choice
  • salt and pepper
  • 1 - 2 tablespoons olive oil
  • For The Maple And Honey Garlic Sauce:
  • 3 tablespoons liquid honey
  • 1 tablespoon olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoons soy sauce
  • 3 large garlic cloves, minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper


Preheat the oven to 350 F.

Prepare your chicken pieces by lightly rubbing each piece with olive oil and then sprinkling each piece with salt and pepper. Place the chicken legs on a baking sheet and place the sheet in the oven.

While the chicken is baking, in a small bowl mix together the honey, olive oil, maple syrup, soy sauce, garlic, salt and pepper. Mix well and set aside.

Turn the legs after about 20 minutes. When the chicken legs are 2/3 cooked, about 35 minutes, remove the sheet from the oven and use a pastry brush to generously coat the chicken legs with the maple and honey garlic sauce, reserving a small amount of sauce. Return the baking sheet to the oven to finish cooking for another 15 - 20 minutes.

Once the chicken legs are cooked through, remove the baking sheet from the oven and brush any remaining sauce over the chicken pieces. Return the chicken to the oven for an additional 2 - 3 minutes to warm the remaining sauce.
